Safe Catch was brought to life by our founder’s care for his Mom, when she developed mercury poisoning from eating tuna every day. As a scientist in training, Sean sprung into technical action, determined to prevent this from happening again to his Mom or anyone else.
Mercury Testing
Mercury levels vary from fish to fish and species to species. Two exactly same-sized fish of the same species, from the same school, can have drastically different mercury readings. So how can one tell which has raised mercury levels? The answer is, unless you literally test every fish there is currently no way to know. That is how revolutionary the Safe Catch technological innovation is, because Safe Catch does test each and every fish it hand selects. This proprietary technology is so robust, it has been internationally certified by the AOAC, a leading independent scientific certification organization.
Safe Catch Elite has a strict mercury limit set 10x lower than the US FDA action limit and averages 25x lower. With international certification of its processes, Safe Catch has become the global leader in understanding mercury levels in tuna and salmon, across several species, with over 6 million fish tested. The highest quality sashimi grade fish are hand selected, tested for mercury, hand-cut and hand-packed to seal in all the natural oils and nutrients and slow cook each one just once for an amazing taste. Chefs know slow cooking protein (Sous Vide) develops natural flavour and texture, so Safe Catch emulates this process.
Naturally Nutritious
Retaining vital oils is an important part of the Safe Catch difference. When opening a can or pouch, do not drain but take a fork and flake the fish. In a matter of moments, all the natural juices will reabsorb into the meat. This is because at Safe Catch we don’t add any fillers, water, preservatives, or broth. What is in the can is only the fish itself and these juices contain omega-3’s (DHA/EPA) and omega-6’s that are so sought after in fish.

The Perfect Salmon Burger Recipe
Anything on the grill is always a great idea! Try this lean, clean protein crowd pleaser.
INGREDIENTS:
3 Cans of Safe Catch Wild Alaskan Salmon
2 Teaspoons Dijon mustard
1 Egg
2 Shallots (or white onion)
½ Cup Coarse Bread Crumbs – we like panko bread crumbs for this recipe
1 Tablespoon Garlic Powder
½ Tablespoon Onion Powder
Salt and Pepper to Taste
1 Tablespoon Olive Oil or Butter
4-6 Buns of Choice
4-6 Slices of Cheese of Choice – we like pepper jack or Swiss
Toppings of Choice
INSTRUCTIONS
- Dice shallot, place in mixing bowl.
- Crack and beat egg in the same mixing bowl.
- Add dry spices and Dijon to the egg and onion mixture. Mix until incorporated.
- Open cans of Safe Catch Wild Alaskan Salmon and flake the fish in the can (do not drain), then pour each into the mixing bowl.
- Fold breadcrumbs in bowl with a spatula until combined (set aside for 5 mins).
- Preheat grill on high, then fold a single sheet of aluminum foil in half to create a double layer and cover grill grate.
- Coat foil generously with cooking spray.
- Use a 1/3 cup scoop of salmon burger mix and form by hand to create burger shape.
- Cook each side 4-5 minutes or until golden brown.
- If desired, add cheese before removing from grill.
