Healthy and Delicious Acai Energy Bites
These easy, convenient, superfood-packed bites are brimming with plant-based antioxidants and fruity flavour. Pack and take them on the go for when you need a boost of energy or have them as an after dinner treat when you’re craving something sweet!
1 cup organic cashew nuts
1 cup frozen blueberries
5 Medjool dates
1 cup hot water
8 Tbsp coconut flour
1 Tbsp Navitas Organics Acai Powder
Unsweetened coconut flakes, for coating
- Soak the dates in the hot water for at least 30 minutes. Before using the dates, drain the water well and remove any date shells.
- Pour 1/4 cup of the remaining water into a food processor or blender and add all of the other ingredients. Blend until well incorporated.
- Scoop out the mixture about one tablespoon at a time and shape into balls.
- Coat with coconut flakes or desired coating and enjoy!
Makes about 10 bites
