If you or someone in your family is on a gluten-free diet, finding gluten-free bread that tastes like the real thing can be difficult. A loaf of gluten-free bread with flavour and texture that is indistinguishable from regular bread sounds hard to believe, doesn’t it? Well, no longer. Udi’s has accomplished this goal that many thought impossible with their gluten-free bread.
Udi’s really has the best taste and texture of any gluten-free bread currently available, hands down. It has a “bakery fresh” flavour and is soft enough to eat without doing anything to it, but it is also excellent when toasted. It tastes so similar to regular bread that most people who try Udi’s would never even know that it’s gluten-free if they didn’t read the label.
This bread contains no dairy, nuts, or soy, which is perfect for those who deal with multiple allergies or food sensitivities. Because gluten is important to various functions in bread dough—like structure, binding, elasticity and moisture retention—when there’s no gluten, other ingredients need to be added to do those jobs. Due to this, there will be some ingredients in gluten-free bread that you may not necessarily expect to see. However, they are many ingredients that are often used in regular bread, so there’s no need to be worried by these ingredients that you may not be familiar with.
For example, Udi’s uses a number of dough conditioners, like calcium sulfate, monocalcium phosphate, cultured dextrose, ascorbic acid, microcrystalline cellulose, and enzymes. Almost all commercial bakeries use dough conditioners to have a dough in which yeast will thrive. Dough conditioners will make the bread lighter and improve texture while keeping it fresher for longer.
It used to be that you couldn’t find gluten-free bread that even resembled the texture or flavour of regular bread, but that has all changed now with Udi’s gluten-free bread.

UDI’S GLUTEN FREE STUFFING
INGREDIENTS
- Non stick cooking spray or oil
- 1 loaf (12 oz each) Udi’s™ multigrain sandwich bread, cut in 1-inch pieces
- 1 loaf (12 oz each) Udi’s™ soft white sandwich bread, cut in 1-inch pieces
- 1/4 cup fresh Italian (flat-leaf) parsley
- 3 tablespoon chopped fresh sage leaves
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup unsalted butter
- 1 large onion, chopped
- 1 cup chopped celery
- 2 eggs
- 1 cup low-sodium chicken broth
- 1/2 cup heavy (whipping) cream
STEP 1
Preheat oven to 375°F. Spray a 3-quart baking dish with cooking spray. Spread bread cubes evenly on large baking sheet. Bake 15 minutes, until golden brown and crisp, stirring halfway through; cool completely. Reduce oven temperature to 325°F.
STEP 2
Melt butter in a 12-inch skillet over medium heat. Add onion and celery and cook until softened, about 6 minutes.
STEP 3
Whisk together eggs, broth and heavy cream in a large bowl. Stir in bread, parsley, sage, salt, pepper and onion mixture. Pour into baking dish, cover with foil and bake 30 minutes. Remove foil and continue baking until golden brown, 20 to 25 minutes.
