Ingredients
- 6 Lundberg Family Farms® Organic Brown Rice Cakes – Lightly Salted
- 1/2 cup Organic Brown Rice Syrup
- 1 cup almond butter
- 1 cup dates, pitted
- 1/2 cup almonds, roasted, salted
- 1/2 cup hemp seeds, hulled
- 1/4 cup cocoa powder
Method
- In a small saucepan over low heat, add the almond butter and brown rice syrup. Mix until thoroughly combined. Set aside to cool.
- In a food processor, combine the almonds and dates. Pulse until finely ground.
- In a large bowl, crumble the rice cakes. Add the almonds, dates, hemp seeds, and cocoa powder. Coat with the heated almond butter mixture.
- Mix the ingredients until fully incorporated. Spoon golf ball-sized portions of the mixture and roll into balls. Repeat until the bowl is empty. Keep refrigerated and enjoy.
