Apple Cranberry Hemp Salad
For the Salad:
- 6 cups mixed greens
- 1 red apple, thinly sliced
- 1 green apple, thinly sliced
- 1 cup walnuts, chopped
- 1/4 cup Manitoba Harvest Organic Hemp Hearts
- 1/3 cup feta cheese, crumbled
- 1/3 cup dried cranberries
For the Dressing:
- 1 cup apple juice
- 4 tbsp. apple cider vinegar
- 2 tbsp. honey
- 1/4 cup olive oil
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- In a large bowl, toss the mixed greens, apples, walnuts, Hemp Hearts, feta, and cranberries together.
- Whisk the dressing ingredients together in a small bowl until emulsified.
- Drizzle the dressing over the salad and toss until all the ingredients are well coated.
- Serve and enjoy!
