Wheying-In: Research says Organic Whey Protein a Nutritional Heavy-Weight

Lost in a powdery haze of misconception, whey protein has long been thought as a nutritional supplement useful only to body builders. Researchers heavily disagree. Research shows whey protein offers health benefits desired by all, with organic whey offering even greater nutritional benefits. 
Organic Whey Under the Microscope
Organic whey protein is made from organic dairy. Organic dairy comes from farms that follow regulated guidelines on how to care for cows, which includes the cows being grass fed and no use of antibiotics or hormones like rBGH. Such practices are ecologically friendly and appear to enhance the nutritional value of the whey.
Many research studies have reported higher amounts of beneficial nutrients in organic whey when compared to conventional whey. In 2011, a study in Sweden showed a difference between milk from conventional and organic dairy farms. When milk from 18 organic and 19 conventional dairy farms were tested, the concentration of good fats (e.g. omega-6) was higher in the organic milk. In 2012, a Polish study reported organic milk was more nutritional — they found organic milk had higher amounts of health promoting compounds beta-lactoglobulin (a valuable protein) and lactoferrin (an effective antimicrobial). Other studies support these findings. In fact, a meta-analysis (that’s a review of all the studies to date) reported that organic dairy products, including whey protein, contain significantly higher amounts of protein, good fats (omega-3s such as ALA, EPA and DHA and omega-6 fatty acids such as CLA) than those of conventional dairy products.

Mushroom, Spinach, Cheese and Whey Crepes
3 free-range eggs
1 cup all purpose flour
2 tbsp organic butter, melted
1 scoop Progressive® Organic Whey Protein 
1/2 cup mushrooms
1 cup organic spinach
2 tbsp feta or goat cheese
Optional: 1 tbsp sugar (substitute stevia, maple syrup or simply skip this ingredient)
Lightly sauté mushooms in olive oil in a small pan over low-medium heat. Add the spinach to the pan for the last few minutes, allowing it to wilt slightly. Remove from heat and set aside. Beat together eggs and butter in a bowl. Then add flour and organic whey protein powder to the mixture. Add sugar if desired. The batter should have a runny consistency. Heat a non-stick pan over medium heat. Cook a thin layer of the batter in the heated pan. Remove and place on a plate. Fold the crepe in half, if desired, and spoon the mushroom-spinach mixture onto the crepe. Sprinkle with cheese. Serve immediately.
